Ingredients

  • Ingredients (for 2–3 servings)

  • NH Foods Steamed Chicken Breast

    2 packs (approx. 180 g)

  • Jasmine rice

    2 cups

  • Water

    2½ cups

  • Minced ginger

    2 tbsp

  • Minced garlic

    2 tbsp

  • Chopped bird’s eye chili

    8–10 pieces

  • Fermented soybean paste

    1½ tbsp

  • Light soy sauce

    3 tbsp

  • Lime juice

    2 tbsp

  • Pickled garlic water

    2 tbsp

  • Palm sugar

    1 tbsp

  • Granulated sugar

    1 tsp

  • Winter melon

    200 g (cut into pieces)

  • Chicken broth

    3 cups

  • Crushed garlic

    3 cloves

  • Salt

    ½ tsp

  • Chopped spring onion

    1 stalk

  • Cucumber

    1–2 pieces (sliced)

  • Lime

    1 piece (cut into wedges)

Cooking Instructions

  1. Cook the rice
    - Rinse 2 cups of jasmine rice.
    - Sauté minced garlic and ginger in a little oil until fragrant.
    - Add rice, stir lightly, then add 2½ cups of water and cook until done.
  2. Prepare NH Foods Steamed Chicken
    - Heat 2 packs of NH Foods Steamed Chicken Breast (Black Pepper) according to package instructions (microwave or hot water).
    - Slice into bite-sized pieces.
  3. Make the spicy dipping sauce
    - Mix fermented soybean paste, light soy sauce, lime juice, pickled garlic water, palm sugar, and granulated sugar.
    - Add chopped chili and minced garlic, stir well.
  4. Cook the winter melon soup
    - Boil chicken broth, add winter melon and crushed garlic.
    - Season with light soy sauce and salt. Simmer until melon is tender, then sprinkle with chopped spring onion.
  5. Serve
    - Arrange fragrant rice and sliced steamed chicken on a plate.
